Here is a recipe for a high protein, low carb pizza:
Ingredients:
- 1 head of cauliflower, grated
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped basil
- 2 eggs
- Salt and pepper, to taste
- 1/2 cup of your favorite pizza sauce
- 1/2 cup of shredded chicken or other protein of your choice
- Additional toppings of your choice (e.g. vegetables, meats)
Instructions:
- Preheat your oven to 425 degrees F (220 degrees C).
- In a large bowl, combine the grated cauliflower, mozzarella cheese, Parmesan cheese, basil, eggs, salt and pepper. Mix well.
- Press the cauliflower mixture onto a baking sheet lined with parchment paper to form the crust, making sure it is about 1/4 inch thick and the edges are slightly higher to contain the toppings.
- Bake the crust for 15-20 minutes, or until golden brown.
- Remove the crust from the oven and spread the pizza sauce over the top.
- Add the shredded chicken or other protein, and your choice of toppings.
- Return the pizza to the oven and bake for an additional 15-20 minutes, or until the toppings are hot and the cheese is melted.
- Let the pizza cool for a few minutes before slicing and serving.
