Here is a recipe for a high protein, low carb pizza:

 Ingredients:

  • 1 head of cauliflower, grated
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of chopped basil
  • 2 eggs
  • Salt and pepper, to taste
  • 1/2 cup of your favorite pizza sauce
  • 1/2 cup of shredded chicken or other protein of your choice
  • Additional toppings of your choice (e.g. vegetables, meats)

Instructions:

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. In a large bowl, combine the grated cauliflower, mozzarella cheese, Parmesan cheese, basil, eggs, salt and pepper. Mix well.
  3. Press the cauliflower mixture onto a baking sheet lined with parchment paper to form the crust, making sure it is about 1/4 inch thick and the edges are slightly higher to contain the toppings.
  4. Bake the crust for 15-20 minutes, or until golden brown.
  5. Remove the crust from the oven and spread the pizza sauce over the top.
  6. Add the shredded chicken or other protein, and your choice of toppings.
  7. Return the pizza to the oven and bake for an additional 15-20 minutes, or until the toppings are hot and the cheese is melted.
  8. Let the pizza cool for a few minutes before slicing and serving.
